I had some gals over for lunch the other day and this is what I served. I told Jen I would put it on my blog. It is very delicious!
Great Chicken Salad
1 qt cooked chicken (3 breast) shredded
1 lb seedless grapes (red and/or green)
1 C chopped celery
2 T green onion chopped
1 C mayo (I like Hellman's)
1 T chutney (or apricot preserves)
1 1/2 t curry powder
1 6oz can chopped water chestnuts
1 small can pineapple chunks
1/2 C toasted slivered almonds
1 T lemon juice
1 T soy sauce
Combine all ingredients, except almonds. Chill overnight. Serve on lettuce or bread, and top with almonds.
